Delicious & fast Vegetarian recipe with Vegan option: Spinach Risotto
Let me introduce you to one healthy and delicious vegetarian dish with a vegan option which you’ll definitely enjoy. It is filling but at the same time a light meal which you can have either at lunch time or as an early dinner dish. It is a quick and easy risotto to make with nutritional ingredients and with a lovely taste to it. Let’s start with the list of the needed ingredients down below:
Prep time: 10 minutes
Cook time: 30 minutes
Yield: Serves 4
Ingredients
300g of rice (arborio rice)
2 kg of spinach
80g of Flora Original spread (suitable for vegans) or Buttery Flora (suitable for vegetarians)
Salt
Garlic
1 Clove of garlic
Parmigiano Reggiano (Parmesan cheese) or Vegan Engevita (option for vegans)
Pepper
1 ½ litre of water
2 vegetable stock pot (Knorr is my favourite)
Fresh parsley
Instructions:
Remove the stems before washing the spinach and make sure that you drain all the water out. In a big boiling pan add 1 ½ litres of water and once it starts to boil put 2 vegetable stocks in. Take a big frying pan, add the butter and 1 clove of garlic and wait until it is golden. Take the garlic out and add the spinach inside the stock pot (most suitable pan but anything similar will be fine) with the butter and let them cook for 2 minutes. Add 2 big scoops of the broth mix and the rice and give a slow stirring to make sure it doesn’t stick to the bottom of the pan. As the rice keeps cooking, when it is needed, keep stirring and adding scoops of vegetable stock to prevent it from drying out or sticking. Once the rice is “al dente” and the risotto has a creamy texture to it add some more Parmigiano Reggiano (or Vegan cheese) to enhance the flavour of the risotto.
It is now ready to serve and as a last touch you can garnish each bowl with some more cheese, parsley and pepper for a great presentation.
Adds-ins:
A little extra tip is to add some white wine to the dish to enhance its flavour and make it tastier. Of course we all have our preferences so it is up to you what you wish to add to your meal. Enjoy the meal! Buon appetito!
